This recipe was adapted from https://www.forksoverknives.com/recipes/vegan-snacks-appetizers/onion-rings/
Ingredients
1 large yellow onion
- 1/2 cup whole wheat flour, oat flour or rice flour
- 1/2 teaspoon sea salt
- 1/4 teaspoon garlic powder, add more accordning to taste
- 1/4 teaspoon onion powder
- Freshly ground black pepper
- 1 cup panko bread crumbs (gluten-free or regular)
- 1 large Vidalia or other sweet onion, sliced into 1/2-inch thick rings
- Ketchup, honey mustard, hot sauce or any condiment for dipping (optional)
- Preheat the oven or an air fryer to 425 Degrees Fahrenheit. Line the baking sheet with a non stick silicone sheet.
- In a medium bowl, mix together the flour, salt, garlic, powder, onion powder, and a pinch of pepper. While whisking, slowly add 1/2 cup water and whisk until well combined. Place the bread crumbs in a shallow dish and set them next to the batter.
- Using a single onion slice, submerge the ring into the batter to make sure it is well covered, then coat it with the bread crumbs. Put the prepared onion ring onto the non stick silicone lined baking sheet or air fryer basket. Continue doing this until all the onion rings are assembled.
- Bake in the oven for 15 to 20 minutes or 12 to 15 minutes in the air fryer until lightly browned and crunchy. Feel free to spring additional garlic salt afterwards and dip in chosen condiment.
Tips. We have a lot of yellow onions on hand leftover from previous recipes and grocery purchases. We found that the onions rings get eaten up quite quickly happily regardless if they are yellow or Vidalia sweet onions. In fact this is a good way to use up our surplus onions in the kitchen.
