OMG Walnut Sauce with blanched Kale

This seems to the the go to sauce when it comes to making something quick, easy and delicious. It pairs really good with blanched kale, mustard greens, collard greens, beet leaves and even the more bitter dandelions. Sometimes this sauce has been used to dip potato wedges.

Prep Time: 5 minutes – Makes about 1-1/2 cups of sauce

Ingredients:

  • 1 cup walnuts
  • 2 to 4 cloves of garlic
  • 1 tablespoon low-sodium tamari sauce
  • 1/4 to 1/2 cup water, for desired consistency

Pour all the ingredients together, walnuts, garlic, tamari in a food processor, blender or magic bullet and blend. Add water gradually until the desired consistency is obtained (1/4 to 1/2 cup): more water will result in a thinner dressing to coat leafy greens. Using less water produces a thicker dip which is creamier in texture.
