Jackfruit is a nutrient dense whole food which signals the onset of summer here when it becomes readily available at the local Asian supermarkets. The lates sale was $0.99 a pound for a whole Jackfruit. Even more surprising was seeing cut Jackfruit at Walmart recently, albeit at $2.99 a pound. The one pictures is closer to 25 pounds. It’s supposed to be the largest tree borne fruit.
At first we just used the pods. As time went on, we discoverer that we could use the white young jackfruit portion and the seeds when cooked. The young jackfruit can be cooked in a sauce and used like shredded pulled pork and the seeds can be boiled, baked and peeled before eating.
