This is a staple in our family and it can be made in a variety of ways with different combinations. We’ve been eating this meal since the beginning of our plant based adventure. It’s also a great meal to throw together when have extra guests and a party on the way.
Server with healthy chips or warm corn tortillas. Recently my youngest requested a burrito variation which they can eat for dinner and pack for their school lunches.

2 cans of black beans, rinsed and drained (1 cup dry black beans soaked and cooked in the instant pot)
1 to 1-1/2 cups of water or vegetable stock
1 Tablespoon of Bragg Liquid Aminos
1 teaspoon chili powder
1 bunch green onions, chopped
1 can water chestnuts, drained
1 cup corn, fresh, frozen, or canned
2 red, yellow or green bell peppers, seeded and chopped
1 bunch cilantro, rinsed and chopped
1 avocado, peeled and sliced (or add guacamole)
3 cups cooked E2 Brown Rice (see link)
Salsa or tamari to taste
