Wet Ingredients:

  • 1 cup mashed bananas (Approx. 2 medium bananas) 245grams
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 3 tbsp maple syrup
  • 3 tbsp non-dairy milk (Almond milk used)

Dry Ingredients:

  • 1 cup super-fine almond flour (we used oat flour so children can bring them to nut free schools)
  • 1 1⁄4 cup gluten-free quick oats
  • 2 tsp baking powder
  • 1⁄2 tsp baking soda
  • 1⁄2 tsp cinnamon
  • 1⁄8 tsp salt

Other Ingredients:

  • 1⁄2 cup vegan unsweetened chocolate chips (can also use 1/2 cup of frozen berries)
  • 1⁄4 cup walnuts, chopped (optional)

Directions:

  1. Preheat Oven:
    • Set your oven to 400°F.
  2. Prepare Muffin Tin:
    • Line a 12-cup muffin tin with 10 muffin liners. Optional: Lightly spray liners with olive oil to prevent sticking.
  3. Mash Bananas and Combine Wet Ingredients:
    • In a medium-sized mixing bowl, mash bananas. Add apple cider vinegar, vanilla extract, maple syrup, and non-dairy milk. Stir well.
  4. Combine Dry Ingredients:
    • In a separate large mixing bowl, combine almond flour, gluten-free quick oats, baking powder, baking soda, cinnamon, and salt.
  5. Mix Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients and stir until well combined. Fold in vegan chocolate chips (and chopped walnuts if desired).
  6. Fill Muffin Liners:
    • Pour the batter into muffin liners. Optionally, sprinkle additional chocolate chips or oats on top for extra flair.
  7. Bake:
    • Bake for 18-23 minutes or until a toothpick inserted comes out clean. We turned the oven down to 350°F once muffins were in the oven.
