Scary-Easy Seasoned Seitan

Putting an easy staple Seitan Recipe here for keepsakes. Some recipes can get quite fancy like one used for in place of a holiday roast. Seitan has been a staple in Asian cultures for a long time usually referred to as Wheat Gluten. This is a good easy recipe to try if your feeling intimated by making your own Seitan. It’s super simple.

Ingredients:

  • 1 1/4 cups vegetable broth
  • 1 Tablespoon low-sodium Tamari
  • 1 teaspoon minced fresh garlic
  • 1 cup wheat gluten
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 Tablespoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried sage
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Tablespoons Nutritional Yeast

Preheat the oven to 375o Fahrenheit. Line a roasting pan with parchment paper or a silicone mat from Silpat sold on Amazon.

For this savory recipe, start by combining broth, tamari, and garlic in a spacious bowl. In another bowl, blend wheat gluten, herbs, spices, and nutritional yeast. Once mixed, hand-knead the ingredients until the dough reaches a firm, elastic consistency—typically around 3 minutes.

In the next step, start by flattening the dough in a roasting pan lined with a Silpat Baking Sheet until it’s about 1/2 inch thick.

Cook in the oven for 20 minutes, remove it, baste it with 1/4 to 1/2 cup of the broth mixture, then flip the seitan over and place it back into the oven for another 20 minutes.

After baking, allow the seitan to cool before slicing. Enjoy!
