Bok Choy with Mushrooms and Air Fried Tofu

Love eating bok choy or any leafy greens. Staple dish growing up at home and in restaurants. Here’s a simple way to feed those greens to the family. Surprisingly even my children love them and one of them isn’t crazy about mushrooms.

Ingredients:

  • 1/4 cup vegetable broth or water
  • 1/2 cup diced onions
  • 1 pounds of bok choy, chopped or I just separate the leaves
  • 1 cup sliced button mushrooms
  • 1 cup air fried tofu cubes
  • 6 – 8 tablespoons Vegetarian oyster sauce ( was lazy here so used Wan Ja Shan Mushroom Oyster sauce and the kids chose some hoisin sauce)

I added a drizzle of sauce the first time I made this and the children chose to add hoisin sauce theirs, but the second time they didn’t even notice and just ate the dish without any added sauce. The marinated tofu cubes and the fact that the vegetables are cooked with onion and vegetable broth also gives it much more flavour.
