I am getting excited about trying my hand at making Spruce Beer. When I lived in Montreal Quebec, Spruce beer, birch beer and ginger beer seemed available at many of the local shops and supermarchés.
It’s currently May here in Ontario and Spruce Tips are available during the spring. The stores that sell Blue and White Spruce are showing spruce tips already but around me they are just beginning.
Colorado Blue Spruce steps from my house and a large one on one of my children’s school friends where we could harvest from.
The White Spruce was sighted at the local park near our place before I knew what Spruce tips sprouts or blooms looked like. This was probably 2 weeks ago and could have changed since then. I also sighted several large looming spruce in the Walmart Parking lot nearby.
May 18th and lots of the Spruce Tips have been in full swing around here. Using the app Picture This, the most vibrant and beautiful bright green tips belong to the White Spruce.
As of May 18th, the White Spruce has been transformed into young new growth and the texture and taste feel is more like conifer needles than tips anymore.
After May 12th Mother’s Day there’s a few White Spruce tips which may have emerged later and the Colorado Blue Spruce Tips are coming out in more abundance, along with Mountain or Elder Spruce.
