This is a fun and versatile dipping sauce. It’s called Toby’s Sauce because some person named Toby in Rip Esselstyn’s ‘My Beef With Meat’ book submitted it. Our family has been using this sauce for all sorts of things. This sauce has been used for dipping fresh spring rolls to the go to condiment for hot pot.
Prep time: 8 minutes. Makes 1-1/2 cups sauce
- 1 large garlic clove, peeled
- One 1-inch chunk fresh ginger peeled and grated
- 1/3 to 1/2 cup water
- 1/2 cup natural peanut butter or almond butter
- 2 tablespoons sweet white miso
- 1 tablespoon low-sodium tamari sauce (or soy sauce)
- 3 tablespoons fresh lime juice or lemon juice (add the zest for extra flavour)
- Cayenne pepper (optional)
- 1 or 2 tablespoons pure maple syrup
Put all the ingredients inside a high speed blender or food processor and blend until it reaches a creamy consistency. Serve immediately or refrigerate for later use. Found if refrigerating, more water can be added as the sauce will thicken over time.
