We used to have an Instant Pot Recipe Book with all the listed times for cooking legumes at the back. One of my two feeters in the house persumably took it to play in their toy kitchen and it has never reappeared. Instead of scouring the internet each time to find the right times to cook soaked or unsoaked beans I thought I would post this here.
For Pinto beans, you don’t need to soak them before cooking them in the Instant Pot, but they’re going to be mashed up for some enchiladas and I have some food in the fridge that needs to be finished so I’m in no rush. It’s entirely optional with a soaking time of 8-12 hours. I’ve decided to soak them overnight, unless I wake up first thing in the morning and start soaking them, I could cook them by the afternoon before the kids get home from school. Although it works, that means I’ll be cooking later in the day so I might as well soak them overnight and get a good start.
Soaked beans will cook for 15 minutes under high pressure in the Instant Pot and 30 minutes for the un soaked option. Natural release time of 15 minutes should be sufficient. Some people like to add seasoning like onion, garlic, chili powder, black pepper, jalapeño, or cumin. The options are endless, I tend to go plain and let others add their own flavouring after.
If you soak your beans, the cook time is shorter. Increase by a few minutes if you want them softer, a little shorter time if you prefer firmer beans.
